Okra with Tomatoes, Bacon and Bell Pepper

Ingredients
  • 6 slices smoked streaky bacon
  • ½ Onion, chopped
  • ½ Red bell pepper, chopped
  • 1 garlic clove, minced
  • 150 to 200g fresh okra
  • 3 medium tomatoes, seeded and chopped
  • 125ml
  • 1 tsp Sriracha, or similar spicy sauce
  • 1 tsp cider vinegar
  • ¾ teaspoon salt
  • ½ teaspoon dried thyme
  • ½ teaspoon freshly ground black pepper
  • Olive Oil as needed
Steps
  1. Cut bacon slices in to half or thirds to make sections approx 3 inches long. Fry in a Wok until cooked but not crispy.
  2. Remove bacon from pan and allow to dry on kitchen paper, (leaving any bacon fat in the pan).
  3. Add Okra to the pan and fry for mins or so (add olive oil if needed)
  4. Add onion, green bell pepper and garlic and sauté for 5 minutes.
  5. Add water chopped tomato, ½ cup water, Sriracha, cider vinegar, salt, thyme, and black pepper and boil for 5 minutes.
  6. Return half the bacon to the pan and simmer, covered, for 15 minutes.
  7. Add remaining bacon and cook uncovered to reduce the liquid till it has almost gone.
  8. Serve as a side dish with grilled pork or chicken.
