Okra with Tomatoes, Bacon and Bell Pepper

Ingredients
- 6 slices smoked streaky bacon
- ½ Onion, chopped
- ½ Red bell pepper, chopped
- 1 garlic clove, minced
- 150 to 200g fresh okra
- 3 medium tomatoes, seeded and chopped
- 125ml
- 1 tsp Sriracha, or similar spicy sauce
- 1 tsp cider vinegar
- ¾ teaspoon salt
- ½ teaspoon dried thyme
- ½ teaspoon freshly ground black pepper
- Olive Oil as needed
Steps
- Cut bacon slices in to half or thirds to make sections approx 3 inches long. Fry in a Wok until cooked but not crispy.
- Remove bacon from pan and allow to dry on kitchen paper, (leaving any bacon fat in the pan).
- Add Okra to the pan and fry for mins or so (add olive oil if needed)
- Add onion, green bell pepper and garlic and sauté for 5 minutes.
- Add water chopped tomato, ½ cup water, Sriracha, cider vinegar, salt, thyme, and black pepper and boil for 5 minutes.
- Return half the bacon to the pan and simmer, covered, for 15 minutes.
- Add remaining bacon and cook uncovered to reduce the liquid till it has almost gone.
- Serve as a side dish with grilled pork or chicken.
