Baked zucchini chips
Ingredients
  • • 2 or 3 zucchini, sliced
  • • 2 eggs, whisked
  • • 2 c. bread crumbs
  • • ¾ c. parmesan cheese
  • • ⅓ c. fresh basil
  • • 1-½ teaspoon red pepper flakes
  • • 1 teaspoon pepper
  • • 1 tablespoon garlic powder
  • • 1 teaspoon salt
Steps
  1. 1. Preheat oven to 450
  2. 2. Mix all dry ingredients.
  3. 3. Dip zucchini in eggs, then coat with dry mixture.
  4. 4. Lay on sprayed cookie sheet, bake 15 to 20 minutes, flipping halfway through.
  5. 5. Serve with dip if desired (below)

  • DIPPING SAUCE
  • Mix together:
  • • ⅓ cup mayo
  • • 1 tablespoon garlic powder
  • • 1 tablespoon lemon juice
  • • ½ teaspoon salt
  • • 1 teaspoon pepper
