Lemon Orzo with Asparagus & Mushrooms (Vegan)
Ingredients
  • 2 lemon, zested, then sliced into ¼″ coins
  • 5 tbsp olive oil, divided
  • 4 large portobello mushrooms, slices into ½″ pieces
  • 2 lb asparagus, trimmed and chopped into 1″ pieces
  • 2 leek, white and light green parts only, halved and thinly sliced
  • 2 c whole wheat orzo
  • 4 cloves garlic, minced
  • 2 tsp sea or kosher salt
  • 2 tsp cracked black pepper
  • 1 tsp dried oregano
  • 4 c vegetable or chicken broth
  • 1.33 c frozen peas
