Pesto Spaghetti Squash Casserole
Ingredients
  • 1 spaghetti squash, cooked and shredded
  • 1 lb chicken breast, cut into ½ inch cubes
  • 2 TBSP olive oil
  • 8 ounces mushrooms, chopped
  • 1 large onion, chopped
  • 1 cup Brussels sprouts, quartered
  • 2 TBSP chopped garlic, about 3 cloves
  • 8 ounces pesto (I like Trader Joe’s)
  • ¾ cup almond milk
  • 4 eggs
  • 2 TBSP dried basil
