Sweet Potato & Barley Chili
Ingredients
  • 1 (28 ounce) can crushed tomatoes
  • 1 medium sweet potato, peeled and cut into 1-inch cubes (1 ½ cups)
  • 1 (15 to 16 ounce) can red beans, rinsed and drained
  • 1 (14 ounce) can reduced-sodium chicken broth
  • ½ cup chopped onion (1 medium)
  • ½ cup chopped red bell pepper (1 medium)
  • ½ cup regular pearled barley (not quick-cooking)
  • ½ cup water
  • 1 tablespoon chili powder
  • 1 tablespoon lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano, crushed
  • ¼ teaspoon ground pepper
  • 1 wedge Lime wedges and/or chopped fresh cilantro
