Quinoa Salad

Ingredients
  • 120g Cup cooked quinoa
  • 400g can corn
  • 400g can black beans
  • 400g can cannellini beans
  • 400g can chick peas
  • 1 red onion chopped small
  • 1 large handful chopped parsley (washed)
  • 1 lemon juiced
  • 10g olive oil
Steps
  1. Rinse and cook quinoa in thermomix, add 1000g water to bowl, add rinsed quinoa to simmering bowl and cook 20mg/100°/sp 4. Fluff with fork and place in serving bowl to cool.
  2. Rinse corn and stir through cooked quinoa, repeat with other tinned ingredients.
  3. Rinse and chop parsley finely and stir through mixture
  4. Chop red onion finely and stir through
  5. Pour over lemon juice and stir through
  6. Pour over olive oil and stir.
  7. Keep in fridge for up to a week.
Notes
  • Recipe can be doubled. Makes a large amount.
  • Serve with tinned salmon, boiled egg or protein of choice.
