Instant Pot Potato sausage casserole

Ingredients
  • 6 mild Italian sausage (casing removed)
  • 1 med onion chopped
  • 1tbs butter
  • 1tsp olive oil
  • I package of stove top chicken stuffing (or any brand) prepared according to package directions
  • 20 baby potatoes sliced
  • Salt and pepper
  • Shredded mozzarella cheese
Steps
  1. This makes enough to make two small 5x7 oval pans. Cooked one at a time.
  2. Turn on sauté mode
  3. Add olive oil and butter
  4. Sauté onions for a few min and add sausage. Let sauté for 5 to 10 min while stirring and breaking up sausage.
  5. Add stuffing mixture and mix well.
  6. Spray pans with cooking spray and line bottom of both pans with sliced potatoes and season with salt and pepper. Top with sausage mixture and sprinkle generously with mozzarella cheese.
  7. Place on trivet and put into instant pot with 1 cup water
  8. Pressure cook 10 min with a 5 min natural release
  9. 5 min under broiler to finish off
