Ingredients

  • 5 ¾ ounces sugar (about ¾ cup; 165g)
  • 1 tablespoon instant espresso powder
  • ¾ teaspoon baking powder
  • ½ teaspoon (2g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same weight
  • ½ teaspoon baking soda
  • 1 ¼ ounces water (about 2 ½ tablespoons; 35g)
  • 3 ¾ ounces bread flour (about ¾ cup, spooned; 106g)

  • 12 ounces finely chopped dark chocolate, between 55% and 75%, or a blend thereof (about 2 heaping cups; 340g)
  • 12 ounces heavy cream (about 1 ½ cups; 340g)
  • Salt and vanilla to taste
