Ingredients
  • subheading: Ingredients for the home made chicken broth:
  • 1 whole chicken, inner parts removed, tail fat chopped off
  • 1 carrot, peeled
  • 1 celery stick
  • 1 small onion
  • 4 peppercorns
  • 2 bay leaves
  • salt, pepper to taste

  • subheading: Chicken Noodle Soup Ingredients:
  • 1 carrot, peeled and chopped
  • 1 celery stick, chopped
  • 1 onion, whole
  • 2 cloves garlic, whole
  • 2 bay leaves
  • 1 cup egg noodles
  • 1 cup shredded chicken
  • 2 tablespoons butter or vegetable oil
  • 4 to 6 cups chicken broth (depending how liquidy you want it) (if chicken broth seems too oily/fatty for you dilute it with water)
Steps
  1. subheading: Directions for the Chicken Broth:
  2. Place chicken in a pot (if pot is too small for whole chicken to be covered with water, chop it into smaller pieces first) and fill the pot up with cold water. Bring to a boil, pour out all the water, fill the pot up again (washing off any residue that has formed on the sides) and bring to a boil again.
  3. As soon as water boils the second time, reduce heat to low, add carrot, celery, onion and peppercorns and continue to simmer, uncovered for 1 hour. Using a spoon, occasionally skim off any film that forms on the surface. Add bay leaves, salt and pepper, a few minutes before broth is done.
  4. Remove chicken, celery, carrot, onion and bay leaves.
  5. **Broth can be refrigerated (after a few hours the fat will rise to the surface and you will be able to just scoop it up with a spoon) or frozen for up to 6 months
  6. subheading: Directions for the Soup:
  7. Heat vegetable oil over medium heat. Add carrots and celery. Sweat the vegetables for 10 minutes, without letting them brown. Add salt/pepper to taste.
  8. Add chicken broth, onion and garlic, and bring to a boil. Once boiling add egg noodles. Reduce heat and cook for 10 minutes.
  9. Add shredded chicken, and bay leaves. Cook 5 minutes. Remove onion, garlic and bay leaves. Serve hot!
Notes
  • Chicken Noodle Soup just in time for the cold fall and winter months. Make your own broth for it to be extra special and delicious.
