SPINACH MADELEINE

Ingredients
  • 2 (10 oz.) pkg. frozen chopped spinach
  • 2 tbs. chopped onion
  • 4 tbs. melted butter
  • 2 tbs. all purpose flour
  • ½ cup evaporated milk
  • ½ teaspoon pepper
  • ¾ tsp. garlic salt
  • ¾ tsp. salt
  • 1 tsp. worcestershire sauce
  • 1 6 oz. roll jalopeano cheese
  • butterbread crumbs
Steps
  1. Cook spinach according to pkg. directions; drain and reserve ½ cup liquid.  Saute onion in butter until tender.  Add flour stirring until blended and smooth.  Slowly add reserved spinach liquid and milk, stirring liquid constantly; cook until smooth and thickned.  Add pepper, garlic salt, salt, worcestershire sauce, and cheese; stir until cheese is melted.  Combine sauce and spinach.  Pour into a 2 qt. casserole; top w/ buttered bread crumbs.  bake at 350 degrees about 30 minutes
