Trim Healthy Mama Cranberry Pie
Ingredients
  • ½ cup Oat Fiber (this is not oat flour or oat bran but something different without carbs or calories, thankfully it is inexpensive)
  • 3 eggs
  • 2 cups fresh or frozen cranberries
  • ¼ tsp. Guar gum or Xanthum (simply leave out if you have an issue with gums)
  • ½ cup of  THM Gentle Sweet
  • pinch of Sea Salt
  • ½ cup chopped walnuts
  • ½ cup or 1 stick of pastured butter (regular is fine for our Drive Thru Sue’s)
  • ½ tsp. Almond extract
  • 1 tsp. Pure Vanilla extract
