Traditional Middle Eastern Shakshuka (Whole30, Paleo, Low Carb)
Ingredients
  • 3 Tablespoons olive oil or ghee
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, diced (optional)
  • 2 teaspoons minced garlic (about 4 cloves)
  • 2 (14.5 oz) cans diced tomatoes, one can drained of liquid
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 6 eggs
  • 1 bunch of fresh cilantro, chopped (about ½ to ¾ cup)
