Jambalaya

Ingredients
  • ¼ C. oil
  • 2 pkg. kielbasa, sliced or 2 pkg. little smokies
  • 2 lbs. boneless chicken breasts, cut into cubes (about 3 breasts)
  • ½ t. cayenne pepper
  • 2 T. Tony’s Creole Seasoning
  • 1 medium onion, chopped
  • 2 T. garlic
  • 3 C. long grain white rice (uncooked)
  • 5 C. chicken broth
Steps
  1. Heat oil in large pot over medium heat. Cook the sausage 5 to 10 minutes and remove from pan.
  2. Add chicken, cayenne and half the Creole seasoning to pan and cook 5 minutes, then remove from pan.
  3. Add onions, remaining Creole seasoning and garlic to pan and cook 8 to 10 minutes until onions are softened.
  4. Take pan off heat, stir in rice, meats and chicken broth. Return to heat and bring to a boil. Cover and reduce heat to low.
  5. Cook 25 minutes, remove from heat. Let stand, covered 10 minutes.
