Ingredients
- ¼ C. oil
- 2 pkg. kielbasa, sliced or 2 pkg. little smokies
- 2 lbs. boneless chicken breasts, cut into cubes (about 3 breasts)
- ½ t. cayenne pepper
- 2 T. Tony’s Creole Seasoning
- 1 medium onion, chopped
- 2 T. garlic
- 3 C. long grain white rice (uncooked)
- 5 C. chicken broth
Steps
- Heat oil in large pot over medium heat. Cook the sausage 5 to 10 minutes and remove from pan.
- Add chicken, cayenne and half the Creole seasoning to pan and cook 5 minutes, then remove from pan.
- Add onions, remaining Creole seasoning and garlic to pan and cook 8 to 10 minutes until onions are softened.
- Take pan off heat, stir in rice, meats and chicken broth. Return to heat and bring to a boil. Cover and reduce heat to low.
- Cook 25 minutes, remove from heat. Let stand, covered 10 minutes.
