Miso Wild Rice, Cabbage and Green Bean Pilaf
This was originally a FOK recipe that I adapted.  Didn't like the lack of spice in it so instead of cooking the rice in water (as the FOK recipe suggested), I used Organic Veggie Broth and Miso Paste to cook the rice in.  
Ingredients
  • One Cup Wild Rice
  • (½ cup or so Instant Brown or White Rice -- if you want to use the Miso Sauce and not pour it off)
  • 3 ¾ cups Vegetable Broth
  • 2 Tablespoons Miso Paste
  • 1 Tablespoon Coconut Oil
  • 1 medium onion, peeled and diced small
  • 1 medium carrot, peeled and diced into small cubes
  • 1 small red bell pepper, seeded and diced small
  • 2 Cups of Green Beans
  • 4 to 5 cloves garlic, peeled and minced
  • 1½ cups chopped green cabbage
  • 1 bunch green onions (white and green parts), thinly sliced
  • 3 tablespoons chopped cilantro
  • Bean Sprouts (optional)
  • Salt and freshly ground Pepper to Taste
  • Tamari Soy Sauce (Gluten Free Soy Sauce)
