Beef or Turkey Chili in Dutch Oven

Ingredients
  • 2 pounds lean (at least 80%) ground beef or turkey
  • 1 large onion, chopped (1 cup)
  • 2 cloves garlic, finely chopped
  • 1 ½ cups chopped green bell pepper
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 can (16 oz) red kidney or chili beans in sauce, undrained
  • 1 can (15 oz) tomato sauce
  • 2 Tablespoons chili powder (1 Tablespoon)
  • 1 ½ teaspoons ground cumin
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • cheese, sour cream for serving
  • baked potatoes or egg noodles for serving
Steps
  1. In 12-inch skillet (or Dutch oven), cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  2. In 4- to 5-quart slow cooker (or Dutch oven), mix beef, onion and remaining ingredients.
  3. Cover and cook on low heat setting 6 to 8 hours. If using Dutch oven, cook in oven at 350 for 2 hours - check for doneness, add time as needed for vegetables to be tender.
Notes
  • 1 hour in Dutch oven is fine
