Szechuan Whole Fish with Spicy Bean Paste 豆瓣鱼
Ingredients
  • 1 Tilapia, about 2 pounds, cleaned
  • 2 tablespoons spicy bean paste, chopped finely
  • 8 cloves garlic, chopped
  • 2 tablespoons chopped ginger
  • 4 stalks scallions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon Salt
  • 4 tablespoons canola oil
  • 1 cup water
  • 1 tablespoon corn starch, mixed with 2 tablespoon water
Steps
  1. Put salt on and inside the fish.
  2. Pan fry the fish on both sides in oil - few minutes
  3. Set the fish aside.
  4. Put in all the ingredients besides the scallions, water, and slurry in the pan.
  5. Stir fry the paste, other ingredients.
  6. Add the water
  7. Add the fish.
  8. Cover and Steam for 8 to 10 minutes.
  9. Remove the fish.
  10. Add the scallions and the cornstarch slurry, and thicken up the sauce.
  11. Serve the sauce over the fish.
