Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces (optional)
  • 1 package (low-fat) kielbasa
  • 1 cup green bell pepper (1 large)
  • 1 cup celery (~4 ribs)
  • 1 white onion, diced
  • 8 cloves garlic, peeled and minced
  • 2 (14-ounce) cans crushed tomatoes
  • 4 cups chicken stock
  • 2 cups uncooked long grain white rice
  • 2 tablespoons Cajun seasoning or Creole seasoning
  • 1 teaspoon dried thyme, crushed
  • ΒΌ teaspoon cayenne pepper
  • 2 bay leafs
  • 1 cup thinly-sliced okra*
  • Kosher salt and freshly-cracked black pepper
  • optional garnishes: chopped fresh parsley, thinly-sliced green onions, hot sauce
