Vegetarian Hot and Sour Soup
Ingredients
  • 4 ea Dried Chinese Black Mushrooms, (shiitake)
  • ea Hot Water
  • 2 tsp Canola Oil
  • 1 ea Carrot, peeled and julienned
  • 5 cp Vegetable Broth
  • ¼ cp Canned Bamboo Shoots, drained, julienned
  • 3 tbsp Cornstarch, dissolved in ¼ cup cold water
  • 3 tbsp Soy Sauce, low-sodium
  • ⅓ cp Rice Vinegar
  • ¾ tsp Ground White Pepper
  • 6 oz Savory Baked Tofu, or firm tofu, julienned
  • 2 ea Eggs, lightly beaten
  • 2 stalk Green Onion, thinly sliced
