Coconut Tofu Vegetable Red Curry
Ingredients
  • ½ block firm tofu, pressed & cut into 1" chunks
  • Corn starch for dusting
  • 1 tablespoon coconut oil
  • 1 teaspoon turmeric
  • ½ onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • ½ jalapeño pepper, deseeded & chopped
  • ½ red pepper, sliced into thin strips
  • 2 tablespoons red curry paste
  • 1 cup coconut milk
  • 2 cups string beans
  • ½ tablespoon tamari, to taste
