Stretching the meat like a meatloaf should, this is real meatloaf, not a baked burger

Ingredients
  • 1 pound extra lean ground beef
  • ⅛ cup olive oil
  • ½ cup sweet BBQ sauce
  • 1 sleeve Ritz crackers, crushed but not powdered
  • 1 egg
  • ¼ diced onions (optional)
  • ½ cup shredded chedder cheese
  • 2 Tablespoons tarragon
  • ¼ catsup
  • parsley
Steps
  1. Crumble crackers in large mixing bowl
  2. Mix in all other items except catsup and parsley
  3. Knead mixture by hand until well mixed
  4. If mix is too damp and won't hold together, add a few more cracker.
  5. I like to form my loaf into a round ball to drop, but a loaf pan works just as well
  6. Spread catsup on top and with back of spoon and sprinkle with parsley
  7. Cook in sprayed pan @ 350F for 1 hour on center rack
