Ingredients
  • 1 each of red,yellow and orange pointy sweet peppers
  • 1 onion
  • 2 leeks
  • 3 small sticks of celery
  • ½ bag ASDA frozen swede and carrots
  • ¼ bag of small cut mixed veg containing cauliflower, broccoli,carrots and peas
  • ¼ bag birds eye peas and sweet corn
  • 2 teaspoons lazy garlic
  • 2 teaspoons Italian herbs
  • I knorr vegetable stock cube
  • Salt
  • 250 gms Red lentils
Steps
  1. Put some water at the bottom of the Instant Pot inner Pot chop up all fresh veg and add to the pot,add the garlic, salt ,Italian herbs and the stock cube crumbled. Then add the lentils followed by all the frozen veg. Add sufficient water to just cover all the ingredients set on soup function for 5 minutes and then let it go to NPR. When cool blitz with a hand blender
