Lightened Up Copycat Olive Garden Chicken Gnocchi Soup
Ingredients
  • 3 Tbsp light butter-I like to use Land O’ Lakes light butter made with canola oil
  • 4 celery ribs, diced
  • 2 tsp minced garlic
  • 1 small white onion, diced
  • ¼ cup all-purpose flour or gluten-free flour
  • 6 cups low sodium chicken broth
  • 1 Tbsp fresh thyme, minced
  • 1 cup matchstick/shredded carrots, chopped
  • Salt and pepper, to taste
  • 1.5 cups diced cooked skinless, boneless chicken breast -you could also use rotisserie chicken without the skin
  • 1 (16 oz.) package refrigerated potato gnocchi
  • 2 cups fat free half-and-half*see notes for other option
  • 2 cups fresh spinach leaves, chopped
