Creamy Vegan Mac and Cheese
Ingredients
  • 2 Boxes Gluten Free Elbow Macaroni
  • 1 cup peeled/diced yellow potatoes (or russets)
  • One large or two small carrots
  • ½ large onion
  • Fresh Garlic
  • ½ cup raw cashews
  • Can Organic Coconut milk
  • 4 tablespoons nutritional yeast flakes
  • 2 tablespoon lemon juice
  • 2 teaspoon salt (or more to taste)
  • 2 pinch cayenne pepper (optional)
  • 1 tsp paprika
  •  
  • Optional Topping - GF bread crumbs (around ½ cup) and 3 TBS Vegan, organic margarine.
