  • ½ of a small yellow or red onion diced
  • 2 garlic cloves minced
  • 1 medium green or red bell pepper diced
  • 2 ¼ cups of vegetable broth
  • Corn tortillas
  • 1 tomato diced
  • 1 avocado diced
  • 1 cup of shredded lettuce
  • Salsa for garnish (optional)
