Ingredients
- 3 ears of corn, kernels cut off the cob (about 2 cups / 270g)
- 1 medium green zucchini, chopped (about 1 cup / 135g)
- ½ yellow, orange or red bell pepper, chopped (about ¾ cup / 95g)
- 1 jalapeno pepper, seeds and veins removed, minced
- 3 garlic cloves, minced
- 2 teaspoons dried basil
- ⅛ teaspoon cayenne powder (omit if you don’t like spicy)
- 1 cup cooked Lima Beans ( 200g)
- 1 cucumber, seeds removed and chopped (no need to peel / about 1 cup / 145g)
- 1 cup cherry or grape tomatoes, sliced in half or quarters - your choice (170g)
- 2 green onions, finely sliced (root end cut off, use green and white portions)
- 1 cup (130g) sweet white onion, chopped
- 2 tablespoons lime juice
- ¼ cup parsley, chopped (10g)
- 1 tablespoon dill, chopped
- ½ teaspoon salt
- 6 turn black pepper
Steps
- First you must shuck your corn (remove the husk and silk). Next, using a sharp knife,
- carefully cut the kernels off each cob and transfer them to a medium- sized bowl, along
- with any of the juice from the cobs that may have been released while cutting. In that
- same bowl, add the prep and measured out zucchini, bell pepper, jalapeno, minced
- garlic, dried basil and cayenne powder.
- In a seperate smaller bowl, add the Lima Beans, cucumber, cherry tomatoes and green
- onions.
- Heat a large skillet over medium heat for 2 minutes, then add the sweet onion and a
- pinch of salt and cook for about 3 minutes, until the onion begins to lightly brown. Add
- a little splash of water if the onion sticks to the skillet or looks dry.
- Transfer the first bowl of ingredients to the skillet (corn, zucchini, bell pepper, jalapeno,
- minced garlic, dried basil and cayenne powder) to the skillet and cook for 5 minutes,
- stirring occasionally, until the zucchini begins to soften, but still has some crunch to it.
- Add the second bowl of ingredients to the skillet (Lima Beans, cucumber, cherry
- tomatoes and green onion), and cook for an additional 3 minutes, stirring occasionally,
- until the tomatoes just begin to soften.
- Remove the skillet from the heat and add the lime juice, parsley, dill, salt and pepper.
- Gently stir until mixed well

- You will need prepared lima beans
