Ingredients
- 1 ½ lbs boneless, skinless chicken thighs
- 1 small yellow onion diced
- ½ head garlic diced
- 1 lime wedges
- bunch of cilantro
- Cup chicken broth
- 1 to 1½ tbsp ground cumin
- ½ cup lime juice
- salt and pepper
- Splash Mrs. Renfro’s Jalapeno salsa
- Plus beans rice and broth as below
Steps
- It's Cilantro Lime Chicken. I had 1 ½ lbs boneless skinless chicken thighs, sautee with one small yellow onion and half a head of garlic (there's no such thing as too much garlic). Cut a lime into wedges, tossed it in, chopped up one bunch of cilantro, threw it in, about a cup of chicken broth, and an absurd amount of cumin. Probably 1 to 1 ½ tablespoons. Idk. I don't measure. Oh! And about ¼ cup lime juice from the squeeze bottle. Maybe not that much. A little less. Salt and pepper. And a splash of Mrs. Renfro's Jalapeno Salsa. 10 minutes high pressure, 10 minute natural release.
- Then I cooked black beans and brown rice. A little more than a cup of brown rice, a can of black beans, drained, about the same amount of chicken stock as rice, and some granulated garlic since I used all the fresh I had in the chicken. Salt and pepper. 15 minutes high, 5 minute quick release.
