Ingredients
  • 1 ½c washed, uncooked black-eyed peas (I did not soak)
  • 1 medium yellow onion, peeled, cut in half, and sliced into half moon slices that are about ¼ inch thick.
  • 4 cloves garlic, peeled and smashed.  Chop until very small
  • 8 oz. mushrooms, cleaned and sliced thin
  • 1 large bunch Tuscan kale, washed, stems removed and chopped into small pieces
  • 2 tsp. liquid smoke
  • ½ tsp. smoked paprika
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • ½ tsp. salt (optional)
  • ½ tsp. black pepper
  • ½ tsp. ground cumin
  • ½ tsp. chipotle powder
  • about 2 cups water
  • subheading: For the grits: (this will be done stovetop):
  • 4c water
  • 1c white grits
  • pinch of salt
  • up to 1 tablespoon your favorite hot sauce
  • ¼c nutritional yeast
  • ½c unflavored plant milk
