Crunch Cookies from San Mateo
Ingredients
  • 1 cup shortening/soft butter/combination
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons water
  • 1 teaspoon vanilla
  • 2 cup (sifted) flour
  • 1 tsp baking soda
  • 1 teaspoon salt
  • 2 cup quick oatmeal
  • 2 cup rice crispies
  • 1 package chocolate bits (any size)
  • ½ cup chopped walnuts (optional)
  • 1 cup shredded coconut (optional)
Steps
  1. Set oven to 350°F.
  2. Cream the butter/shortening with the white and brown sugars. Beat in the eggs, water, and vanilla. Add the flour, baking soda, and salt, and mix thoroughly but gently. Mix in the oatmeal, crispies, chocolate bits, and any optional additions.
  3. Drop spoonfuls of mixture on to baking sheet. Bake for 10 to 12 minutes.
