Healthier Classic Chicken Pot Pie
Ingredients
  • 2 Tbsp butter
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 2 cups stemmed and quartered white or cremini mushrooms (optional)
  • 2 large Yukon potatoes
  • ½ Cup water
  • 2 cups chopped cooked chicken (leftover or pulled from a store-bought rotisserie chicken)
  • 1⁄4 cup flour
  • 2 cups low-sodium chicken broth, warmed
  • 1 cup 2% or whole milk
  • 1⁄2 cup half-and-half
  • 1 1⁄2 cups frozen peas and carrots
  • Salt and black pepper to taste
  • 1 sheet puff pastry, defrosted ( or favorite pie crust)
  • 2 egg whites, lightly beaten
