Stir Fried Pork Chops with Onions(洋蔥豬扒)
Ingredients
  • 2 slices Pork Loin Steaks
  • 1 Onion
  • 1 tablespoon Cooking Oil
  • subheading: Flavourings for marination:
  • 1 teaspoon Bicarbonate Soda
  • 1 tablespoon Oyster Sauce
  • 1 teaspoon Fish Sauce
  • 1 teaspoon Dark Soy Sauce
  • 1 teaspoon Shaoxing Wine
  • 1 teaspoon Corn Starch
  • subheading: Sauce:
  • 2 tablespoon Ketchup
  • 1 teaspoon Sugar
  • 1 teaspoon White Vinegar
  • 1 teaspoon Worcester Sauce
  • 2 tablespoon Water
Steps
  1. Dry the pork loin steaks. Marinate the pork with the flavorings for at least 2 hour
  2. Dice the marinated pork by cutting the veins in reverse direction to the veins(straight cut when the veins are horizontal)
  3. Prepare the sauce
  4. Dice the Onion into strips
  5. Heat the wok with 1 tablespoon of Cooking Oil. Fry the pork in medium heat until it is fully cooked. Get the pork out of the wok for later stir frying.
  6. Stir fry the onions in the wok until the onions are softened, yellowish and give their smell
  7. Pour the sauce into the wok and continue the stir frying for 30 seconds
  8. Put the pork back into the wok, stir fry the ingredients inside the wok for 1 minute and serve
Notes
  • The more time used for marination, the more tasty the pork chops will become
  • Pork shoulder steaks are more tender for this dish because there are more white veins(protein) on it
  • Cutting the veins in reverse direction is to make the pork tender after cooked
  • To make sure that the pork is fully cooked during frying, when the edges of the pork become white, flip the pork to the other side until the nasty smell of the pork disappears and the pork turns brownish.
  • Bicarbonate Soda is used to soften the meat like pork and beef
