Roasted Cauliflower Leek and Potato Soup
Ingredients
  • 3 tbl olive oil (for cauliflower)
  • 1 tbl butter + 1 tbl olive oil
  • 2 heads of cauliflower, cut into 1 inch florets
  • 4 large leeks, cleaned and cut into ¼ inch slices
  • 3 stalks of celery, sliced
  • 4 to 6 cloves of garlic, chopped
  • 1 to 2 gold potatoes peeled and diced into 1 inch pieces
  • ½ tsp salt
  • ½ tsp pepper
  • 8 cups chicken broth
  • 2 tsp chicken bouillon powder
  • For garnish: grated Parmesan cheese, bacon, cheddar cheese, etc…
