NO COUNT BACON COTTAGE CHEESE QUICHE

Ingredients
  • 300gms cottage cheese
  • ½ chopped onion
  • 8 bacon medallions
  • 6 eggs
  • Italian herbs
  • 6 cooked new potatoes
  • ½ pack mushrooms
  • 100gms protein cheese
  • Peas and sweet corn ( defrosted )
Steps
  1. Part cook medallions, line a quiche dish. Cut new potatoes into ⅛ ths, chop mushrooms, cut onion in ¼ and slice. Sauté onions for a couple of mins, then add potatoes and mushrooms, sauté for another couple of mins. Place on top of bacon in dish. Sprinkle on herbs
  2. Blitz the eggs, cottage cheese and protein cheese till smooth. Pour over the veg. Place dish in heated 180 oven and cook for 25mins.
  3. 2 SPs  for whole quiche! I cut it into 4 portions, so 0sp a portion.
