call me if you have questions hahahahahahahaha!! curry recipe that you can mix and match whatever the FRICK you want. I kinda winged the recipe, but I wrote down a variety of ways to cook things so you can really make it your own.

Ingredients
- subheading: Spices and seasoning:
- 2 to 4 oz of Maesri green/yellow/red curry paste (2 oz is half of the can)
- 1 tablespoon of fish sauce
- 1 to 3 teaspoons of sugar (up to you how much sweet you want, palm sugar if you have it, no worries if you don't)
- 1 tablespoon vegetable oil
- Salt
- subheading: Solids:
- 1.5 pounds protein cut into 1-inch pieces (up to you: tofu, shrimp, fish, chicken, etc)
- 2 cups of a variety of 1-inch chopped up vegetables (up to you on how chunky you want the curry. You can throw anything in - mushroom, eggplant, bell peppers, onion, snap peas, box choy, etc.)
- (optional because it's hard to find) ¼ cup Thai holy basil leaves
- subheading: Liquids:
- 1 can of coconut milk
- 0.5 to 1 can of chicken broth (up to you - add full can if you want it thinner)
- subheading: Garnish:
- 0 - 3 Thai bird chilis, diced (up to you how spicy you want it, the paste is already kinda spicy)
- subheading: For serving:
- Cooked rice or noodles
Steps
- Cook your fricking rice right now if you haven't already, so by the time it's done, this shit is done!
- Heat the oil in a 4-quart (or larger) Dutch oven or heavy pot set over medium heat until glimmering. Add the curry paste. Be cautious, as it will sputter. Fry the paste for 2 minutes, stirring frequently. This will be quite pungent, so turn on the fan or vent!
- Add in the meat to mix with the curry until evenly covered.
- Add the coconut milk can and ½ can of chicken broth. If you want it a little thinner add the rest of the chicken broth. Bring to a boil and then reduce the heat to medium-low and simmer until the meat is cooked through. Maybe 5 to 15 minutes. If you're using tofu, shrimp, or fish (fast cooking protein), you can move to to step 4 earlier.
- Add the denser vegetables first and less dense ones last. Simmer just until tender. For example, if you have less dense vegetables like chopped up bok choy, add those at the last second before serving so they aren't over cooked.
- Add in fish sauce and sugar. Add in the thai basil too if you have it. Maybe a pinch of salt. Taste and adjust seasonings with more fish sauce, sugar, and salt until it is balanced enough for your tastes.
- Serve over rice or rice noodles. Add thai chili if you want it spicier.
Notes
- On heat: Use the full 4-ounce can if you want it crazier. If you have a lower tolerance for heat, use half the can. You can always add more spicy with the chilis after you cook so you don't ruin a whole batch!
- If shit is too spicy for you, have coconut milk on the side for you to add to your bowl. You can make it look pretty like a latte and decorate it with droplets of milk if you want.
- More vegetables: You can always throw in cooked vegetables after you cook everything if you find it not having enough chunky stuff in it!
