Vegetarian Cajun Risotto
Ingredients
  • 1 6-oz. soy chorizo sausage,casing removed
  • 1 Tbs. olive oil
  • 5 green onions, chopped (1 cup)
  • 2 celery stalks, halved lengthwise, thinly sliced (½ cup), plus celery leaves for garnish
  • 1 4-inch fresh rosemary sprig
  • ¾ cup arborio rice
  • ⅓ cup dry white vermouth
  • 1 ¾ cups low-sodium vegetable broth
  • 1 Tbs. dried chopped onion
  • 1 ⅔ cups frozen sliced okra, thawed
  • ½ cup drained, diced canned tomatoes
