Ingredients
  • 300 gr cooked brown or green lentils
  • 2 shallots and 2 garlic cloves diced and sautéed in love oil
  • A small bunch of parsley
  • 2 tsp dried Italian herbs
  • 1 tbsp tomato paste
  • 1 tsp red chili flakes
  • 2 tbsp nutritional yeast
  • ¼ cup oats maybe little more in case the mixture is too moist
  • 1 flax egg {1 tbsp flax meal + 3 tbsp water}
Steps
  1. Toss all ingredients in a food processor and pulse until you have a good consistancy. It should hold together but still have a bit of chunky feel.
  2. Form 12 little balls with wet hands. Keep wetting hands in between so the mixture doesn't stick to your hands.
  3. Fry in a hot pan with some olive oil about 5 minutes on each side.
  4. Serve with your favorite home made marinara sauce and pasta!
  5. Don't forget loads of fresh basil and a good olive oil on top
