Potato Cheese Soup

Ingredients
  • 5 c chicken broth (3 cans)
  • 1 grated carrot
  • 1 small onion, grated (or use 1½ T dried minced onions)
  • 4 T flour
  • 1 pt half and half
  • 8 potatoes, diced
  • 1 celery stalk, chopped
  • parsley flakes
  • 4 T milk
  • 3 to 4 c grated cheese
Steps
  1. Cook veggies in chicken broth until tender.
  2. Mix flour and milk.
  3. Add to broth to thicken.
  4. Stir in half and half and cheese.  Heat, but do not boil.
Notes
  • This will curdle if you let it boil.  Watch it carefully!
