Chocolate Chip Cheesecake
Soft Chocolate chip cheesecake
Ingredients
  • 1 box "Nabisco Famous Chocolate Wafer" cookies (crushed)
  • ¼ cup butter (melted)
  • 1 tsp cinnamon
  •  
  • 2 lbs cream cheese (softened)
  • 2 cups sugar
  • 4 eggs
  • 3 tsp vanilla
  • 2 cups sour cream (16 oz)
  • 1 (12) oz package of semi-sweet chocolate chips
Steps
  1. Combine chocolate wafers, butter, and cinnamon.  Press into bottom of a 10" spring-form pan.  Chill overnight or freeze for 30 to 60 min.
  2. Beat cream cheese and sugar until fluffy and smooth.  Add eggs, 1 egg at a time, add vanilla.  Stir in sour cream.  Blend in Chocolate chips.
  3. Bake at 350° 1 hr-10 min.  (The cake will still be runny, but will form up as it chills).  Cool @ room temp then chill at least 5 hours before serving.
Notes
  • This bakes without a water bath and so will usually crack along the top.  To help prevent this, do not remove immediately when done baking, instead turn off oven and crack door open with wooden spoon.
