The Hirshon Ultimate Jewish Noodle Kugel
Ingredients
  • SCALE 1X 2X 3X
  • 1 LB. MEDIUM FLAT EGG NOODLES
  • 4 ounces Philadelphia cream cheese
  • 4 ounces top-quality organic cottage cheese
  • 1 regular butter stick-sized piece of Kerrygold Irish salted butter, melted
  • 5 oz. Daisy sour cream
  • 20 oz. can Dole crushed pineapple in 100% juice
  • ¼ c. golden raisins (ideally soaked 30 minutes in Grand Marnier or white kosher grape juice)
  • ¼ cup dried cranberries (replace with equivalent volume of golden raisins if you prefer a more traditional kugel)
  • ¾ cup sugar combined with 1 Tbsp. freshly-grated nutmeg, 1 ½ Tbsp. mahleb (or substitute mace, but understand that mace has a totally different flavor profile), and 1 tsp. freshly-ground cardamom - reserve 3 Tbsp. for topping (if you prefer a traditionally-spiced kugel, replace all spices with equivalent amounts of freshly-grated Ceylon cinnamon)
  • 2 tsp. vanilla bean paste
  • 2 oz. Ambrosia Devon custard
  • 1 oz. Bailey’s Irish Cream
  • 3 eggs, beaten
