Ingredients
  • 2 Jars (160z each) mild (I use medium) picante sauce
  • 4c chopped fresh cilantro
  • 2 TBSP Chili Powder
  • 1tsp ground cumin
  • 2 cups (100z) chopped cooked chicken
  • 1 can (150z) black beans, rinsed and drained
  • 1 ⅓ cups French fried onions (walmart makes a generic that costs a lot less than french's)
  • 1 package (10oz) 7" flour tortillas -I use the low carb ones
  • 1 cup pepperjack cheese, shredded
Steps
  1. Preheat oven to 350F. Grease 15X10" jelly roll pan. Combine picante, cilantro, chili powder, and cumin in large saucepan. Bring to a boil. Reduce heat to low; simmer 5 minutes.
  2. Combine 1 ½ cups sauce mixture, chicken, beans, and ⅔c French fried onions in medium bowl. Spoon a scant ½ cup filling on tortilla and roll up. Place seem side down on baking sheet. Spoon remaining sauce evenly over tortillas.
  3. Bake uncovered, 20 minutes. Sprinkle with cheese and remaining onions. Bake 5 minutes or until cheese is melted and onions are golden.
