Cast Iron Roasted Root Veg Side Dish
Ingredients
  • Fresh beets. Purple carrots and sweet potato
Steps
  1. Slice beets and carrots in half after washing
  2. Peel sweet potato and cut into lengthwise square strips
  3. Coat all in olive oil and sprinkle with g-f bread crumbs
  4. Heat olive oil in cast iron pan
  5. When hot, arrange veggies in pan; sear, turning when charred, until tender
  6. Season to taste
  7. Keep heated in oven if necessary
  8. Serve hot with sour cream or plain yogurt
