  • 20  ounce can  green jackfruit  , drained and rinsed
  • 4  medium  potatoes  , cubed
  • 1  medium  carrot  , diced
  • 15  ounce can  coconut milk
  • 2  cups  vegetable broth  , or 2 cubes vegetable bouillon plus water
  • 1   teaspoon  Italian seasoning
  • ¼ to ½  teaspoon  Cayenne pepper  , or 1 whole Scotch Bonnet pepper
  • 1  batch  dumpling (optional)  , recipe below
  • ¼  cup  chopped cilantro leaves  , or parsley
  • Salt to taste  , optional
