Salsa Chicken for Taco/ Burrito

Ingredients
- 1½ to 2lbs Boneless Skinless Chicken Breasts
- ½- Onion roughly chopped
- 1- Jar of Salsa 16 oz. Use you favorite.
- 2 to 3 Tbls. of taco seasoning.
- ¼ cup Chicken stock (optional)
- Veg. Oil
- Salt/Pepper to taste.
Steps
- Use sauté button and add oil when "Hot".
- Sauté onions until translucent. ( about 5 min. )
- Add Chicken breast to pot along with taco seasoning, salt and pepper. Let the chicken and spices cook for a minute or two, turning the chicken. I feel letting the spices cook a bit helps them to release their flavor.
- Add the Salsa. Use chicken broth to rinse out all the goodies in the jar of salsa, and add to pot.
- Make sure you scrape the bottom of the pot to release the browned bits into the sauce.
- Cover and set for 10 min. high pressure. ( I just pushed the poultry button and adjusted the time.)
- Then 10 NPR followed by a QR.
- Remove chicken. Turn your IP to sauté and let the sauce start to reduce. In the meantime, shred the chicken and return it to the pot.
- Serve when sauce is at your desired consistency.
