Salsa Chicken for Taco/ Burrito

Ingredients
  • 1½ to 2lbs Boneless Skinless Chicken Breasts
  • ½- Onion roughly chopped
  • 1- Jar of Salsa 16 oz. Use you favorite.
  • 2 to 3 Tbls. of taco seasoning.
  • ¼ cup Chicken stock (optional)
  • Veg. Oil
  • Salt/Pepper to taste.
Steps
  1. Use sauté button and add oil when "Hot".
  2. Sauté onions until translucent. ( about 5 min. )
  3. Add Chicken breast to pot along with taco seasoning, salt and pepper. Let the chicken and spices cook for a minute or two, turning the chicken. I feel letting the spices cook a bit helps them to release their flavor.
  4. Add the Salsa. Use chicken broth to rinse out all the goodies in the jar of salsa, and add to pot.
  5. Make sure you scrape the bottom of the pot to release the browned bits into the sauce.
  6. Cover and set for 10 min. high pressure. ( I just pushed the poultry button and adjusted the time.)
  7. Then 10 NPR followed by a QR.
  8. Remove chicken. Turn your IP to sauté and let the sauce start to reduce. In the meantime, shred the chicken and return it to the pot.
  9. Serve when sauce is at your desired consistency.
