Herbed White Bean and Olive Salad
Ingredients
  • 1 ½ cups cooked white beans, navy or cannellini beans
  • 1 cup chopped fresh parsley
  • ½ cup chopped fresh basil
  • ¼ cup kalamata olives, sliced
  • 1 ½ Tbsp olive oil
  • 1 tsp red wine vinegar
  • ¼ tsp salt
  • salt and pepper to taste
  • subheading: Optional Additions:
  • 1 Tbsp lemon juice, tomatoes, red peppers, zucchini, spinach or arugula.
