Lemon Honey Orzo with Feta

Ingredients
  • 1 15 oz can chickpeas *or garbanzo beans
  • 1¾ cup orzo *uncooked, cook according to the package
  • 1 large red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, chopped
  • ¼ cup red onion, chopped
  • ½ cup shaved almonds
  • ½ cup feta, crumbled
  • subheading: Lemon Herb Dressing:
  • ¼ cup olive oil
  • 2 to 3 Tbsp lemon zest
  • ⅓ cup lemon juice *2 lemons
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cloves garlic, minced
  • ¼ cup honey
  • 2 Tbsp chopped cilantro
  • 1 Tbsp chopped parsley
  • 1 tsp fresh thyme
