  • 1 medium eggplant
  • 2 zucchini
  • 1 x 400g tin crushed tomatoes
  • 1 x 400ml tin coconut cream
  • 1 x 400g tin chickpeas
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • ¼ bunch coriander
