Vegan Cauliflower Tikka Masala
Ingredients

  • 1 ½ teaspoon coriander powder
  • ½ teaspoon garam masala
  • ½ teaspoon Kashmiri red chili powder (mild)

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 dry red chili (optional)
  • 1 large red onion, finely diced
  • 1 small serrano pepper or (1 to 2 Indian green chili), finely diced (remove seeds to make it less spicy)
  • 3 garlic cloves, mined
  • 1 inch ginger, minced
  • ½ teaspoon turmeric powder
  • ½ teaspoon Indian red chili powder
  • 1 ½ teaspoon coriander powder
  • 2 teaspoons tomato paste
  • 2 medium tomato, pureed
  • ¾ cup water
  • ¼ teaspoon sugar
  • ½ teaspoon thick coconut milk
  • 1 teaspoon garam masala
  • 1 ½ teaspoon dry fenugreek leaves (kasoori methi)
  • salt to taste
  • lemon juice to taste
  • handful finely chopped coriander leaves
