Mushy Peas
Ingredients
  • 3 tablespoons butter
  • 1 shallot, diced
  • 1-pound fresh English peas
  • 1 cup chicken broth
  • 3 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • Garnish: fresh mint and fresh chives
Steps
  1. In a saucepan, melt butter over medium-high heat. Add shallot, and cook, stirring often, until tender, about 3 to 5 minutes. Add peas, and cook, stir­ring often, for 5 minutes. Reduce heat to medium and add broth. Cover, and sim­mer for about 10 to 15 minutes.
  2. Add mint and chives. Using the back of a spoon, mash peas. Season with salt and pepper. Garnish with fresh mint and chives, if desired. Serve immediately.
