Slowcooked Chicken Carnitas
Ingredients
  • subheading: For The Meat:
  • Chicken thighs bone in, skin on 5 to 6
  • Orange juice 1 ½ cups
  • Lime juice ½ cup
  • Chopped garlic 2 tbsps
  • Chilli powder 2 tbsps
  • Cumin 2 tsps
  • Oregano 2 tsps
  • Salt 1 tsp
  • subheading: Toppings:
  • Red onion, sliced ½
  • Fresh chopped cilantro ½ cup
  • Salsa verde
  • Crumbled queso fresco
Steps
  1. Place all the carnita ingredients in a slow cooker and cook on low for 6 to 8 hours or on high for 5 hours.
  2. Remove the chicken from the slowcooker and pull apart with 2 forks, removing the bones.
  3. Optionally finish the meat in a skillet with a bit of the juices before serving on tortillas with toppings.
