Low Carb Almond Flour Cookies Recipe
I redid this recipe using the ingredients/brands available to me.  They come in at 1g Net Carbs.  I also took about 4 sugar free peppermint candies - crushed them and sprinkled on top for that *Christmas* yum!

Ingredients
  • 2 ½           cups  Almond Flour - Costco
  • 6               tbsp  butter -- softened
  • ½           cup  Swerve - Powdered
  • 1                tsp  vanilla extract
Steps
  1. Preheat the oven to 350 degrees F (177 degrees C). Line a cookie sheet with parchment paper (I used a silicone sheet).
  2. Use a hand mixer or stand mixer to beat together the butter and Swerve until it's fluffy and light in color (this is made really easy by using the stand mixer and scraping down the sides a couple of times).
  3. Beat in the vanilla extract. Beat in the almond flour, ½ cup (64 g) at a time. (The dough will be dense and a little crumbly, but should stick when pressed together.)
  4. At this point I divided the dough into 18 round balls of about equal size - then put them on the silicone sheet.
  5. ( Original Instructions :Scoop rounded tablespoonfuls of the dough onto the prepared cookie sheet.)
  6. Flatten each cookie to about ⅓ in (.8 cm) thick. (You can make them thicker or thinner to your liking. Keep in mind they will not spread or thin out during baking, so make them as thin as you want them when done.)
  7. If topping with peppermint chips (I used Russell Stover No Sugar Added Starlight Mints) - take 4 to 5 mints and place them in a high powered blender (I used a Vitamix) or in a food processor and break up mints by pulsing until you get the *crush* you want.  Sprinkle each cookie with some of the mint crush.
  8. Bake for about 12 minutes, until the edges are golden. Allow to cool completely in the pan before handling (cookies will harden as they cool).
Notes
  • Salted butter is recommended. If using unsalted, add couple pinches of sea salt to the dough in step 3.
