PAT’S DAIRY FREE BANANA AND MIXED FRUIT LOAF CAKE
MADE IN THE INSTANT POT OBLONG CAKE MOLD

Ingredients
  • 110gms Vitalite
  • 70gms Caster Sugar
  • 225gms S/R Flour sifted
  • 2 Large eggs
  • 2 ripe medium sized bananas mashed
  • 200gms mixed fruit
  • 50mls cold water
Steps
  1. Whisk the Vitalite and caster sugar until pale and fluffy
  2. Whisk the eggs 1 at a time
  3. Stir the bananas in with a spatula
  4. Add in the mixed fruit
  5. Fold in half the flour
  6. Mix in the 50 mls if water
  7. Add the remaining flour
  8. Put in the mold and loosely cover with foil
  9. Put 250 mls water in the inner pot
  10. Lower the tin tin on the long handle silicone trivet
  11. Open the valve to venting press steam and set for for 15 minutes set a timer when steam starts coming out it as the Pot doesn’t count down on steam
  12. Press cancel and set to manual for 45 minutes
  13. Cancel when finished and let It go to NPR
